Roslyn Dudley was raised in Roanoke by her grandparents and is a graduate of Lucy Addison High School’s class of 1966 and moved to NY where she currently resides. She became a vegetarian some 35 years ago and began to transform some of her familiar dishes into vegetarian versions.
She recently released a vegan cookbook titled “Vegan Cooking for the Soul.” This book offers over 65 vegan recipes that feature vegetarian, diary- free versions of some of the dishes that she and her family enjoyed while she was growing up in Roanoke. Cornbread, fried apples, corn pudding, green beans, and sweet potato pie are but 7some of the family favorites that you will find.
